EPUB and ODT explained

EPUB is essentially a website in a box — a ZIP of XHTML and CSS. Because the content is reflowable, the reader chooses the font size and the text re-wraps, rather than being locked to a page.

ODT is the OpenDocument text format, an ISO standard that works much like DOCX — a ZIP of XML — but developed openly rather than by a single vendor.

Why convert EPUB to ODT?

People make this switch when they run into the limits of EPUB: layout-critical content such as illustrated children's books or technical manuals with precise figures. ODT is the better fit when working in LibreOffice or under an open-standards requirement.

EPUB limitations that prompt the switch
Kindle needs conversion or a different format. Fixed-layout content such as comics works poorly. Rendering varies between readers.
What you give up
Word support exists but loses some formatting. Less common in commercial settings.
