OGV and MKV explained

OGV is the Ogg container carrying Theora video, an early royalty-free codec that has been comprehensively superseded by VP9 and AV1.

Matroska is a container designed to hold essentially anything: any codec, unlimited audio tracks, subtitle tracks, chapters and attachments in one file. It is the format of choice for archiving films with multiple languages.

Where OGV files come from: Open-source projects and Wikipedia media from the early 2010s.
Where MKV is used: Media archives, anime and film collections, and high-quality recordings.

Why convert OGV to MKV?

People make this switch when they run into the limits of OGV: new work — WebM does the same job far better. MKV is the better fit when archiving or watching in a capable player such as VLC or a media server.

OGV limitations that prompt the switch: Theora compresses poorly compared with anything modern. Very limited support. No reason to choose it today.
