Video is the format where the thing being converted is usually a recording of people, and often of people who did not expect a third party to have a copy. It matters more than it sounds, because of what video files usually are:

MKV and WAV explained

Matroska is a container designed to hold essentially anything: any codec, unlimited audio tracks, subtitle tracks, chapters and attachments in one file. It is the format of choice for archiving films with multiple languages.

WAV stores uncompressed PCM audio — the raw samples, exactly as captured. A stereo CD-quality minute is roughly 10 MB, which is the price of having no compression whatsoever.

Why convert MKV to WAV?

This is not really a format swap — it is extraction. An MKV file carries a video track and an audio track side by side, and converting to WAV discards the picture and keeps the sound.
